“Your Clients are Using Artificial Intelligence for Meal Planning, Why Aren’t You?”

Presentation Overview:

58% of consumers use artificial intelligence (AI)-powered personalized meal planning. This is similar usage to 59% of clinicians who use artificial intelligence (AI). While clinicians are open to using AI, research has shown that they are unsure of its implementation (Lindardon, 2025). This presentation walks the attendees through how to create a personalized meal plan using the diabetic exchange list. The presentation will include a live demonstration with suggested script for interviewing the client and creating the personalized meal plan. The live demonstration then shifts to highlight the implementation of using AI for three food-related uses such as recipe recommendations, automated grocery list, and personalized meal planning.   1. Attendees will be able to compare the usage rates of artificial intelligence (AI) in food-related choices between clients and clinicians.
  2. Attendees will be able to discuss how dietitian-created individualized meal plans can positively impact client’s eating disorder recovery.
  3. Attendees will be able to investigate how AI can be used as a tool to further personalized dietitian-created individualized meal plans.

Speaker Biography:

Dawn Lundin (she/her) is a registered dietitian and owner of Restore Ease Dietetics, LLC, a virtual private practice that focuses on mental health + sports nutrition. Her counseling style is consistent with Radically Open Dialectible Behavior Therapy (RO-DBT) which caused her to seek supervision from Kayla Jessop, RDN, CEDS-C. Dawn practices an individualized approach to treating adolescents and young adults with eating disorders. She lives in the Upper Peninsula of Michigan with her husband and three sons. They love to travel and spend time adventuring on the trails and in Lake Superior. She can always be found carrying extra snacks.
